âGrilling came about from a process of preserving meat. Centuries ago, before modern day refrigeration, meat was preserved by being laid out in the sun. Then they built smoke houses to help keep the meat from spoiling due to infestation of bugs. So comes the modern day Barbeque as we know it. In South Texas, where I was born and raised, it was pretty simple. All you needed was a good mesquite fire with four bricks and some expanded metal. We would take the hot mesquite coals and put them under the expanded metal that was laid on top of the four bricks. Season your meat and get to grilling.
Growing up on a working cattle ranch was hard work. But when it was time to relax we got whatever meat we had available and enjoyed some great barbeque with the family. Of course in the Mexican culture we love to get together. And nearly every time we got together, we grilled. It was a social event where everybody enjoyed a great meal and each others company.
Today's grills come in all different shapes and sizes. We have grills for backyards. We have grills on trailers to accomadate a big crowd. There is even grills that can grill enough meat to feed 1000+ people. But for our show we will be using a medium size grill to feed about 10 people.Â
